I do not want the professions that bring money, but the professions that are good for your car.

For personal use, probably the best professions for a gnome mage would be Tailoring and Enchanting. Alternately, you could train Mining and Engineering.
Advantages of Tailoring/Enchanting: You can gather cloth from any humanoid mob, and as a mage, you can AoE grind large groups of them all at once. You can disenchant crafted Tailoring items for Enchanting materials. Finally, there are several enchants and bind-on-pickup tailoring items which are very good for mages.
Advantages of Mining/Engineering: Selling ore is always profitable, no matter what. You get a racial profession bonus to Engineering as a gnome, so you get a quick head start there. Engineering gives you some additional “outs”, letting you double up on mage tricks (e.g. Invisibility fades? Use your Gnomish Cloaking Device!). In general, engineering tends to be fun (quirky items), and most of what you make can only be used by engineers (scopes can be a profitable crafting recipe, though). Finally, high-level engineers have some absolutely exceptional bind-on-pickup headpieces.

I agree with he first poster. Except that once you do the enchants once you won’t need them again till you get a new piece of gear. Also after you reach the higher levels you won’t tailor as much either.
In my opinion take advantage of guild members for tailoring.
I would level Alchemy and Enchanting. look up the different elixirs on wowwikki.com and the enchants also
